Ingredients
1 cup uncooked long grain white rice
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/2 teaspoon dried oregano
2 cups chicken broth
2 cups baby spinach
1/2 cup crumbled feta cheese
Directions
In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
Add the black pepper, nutmeg, oregano, and rice and stir to combine. Cook for 1 minute.
Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pan, and simmer for 15 minutes.
Add the spinach and feta cheese and stir to combine. Cover the pan and simmer for an additional 5 minutes.
Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and serve warm.
