Ingredients
- 1 cup uncooked long grain white rice
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon dried oregano
- 2 cups chicken broth
- 2 cups baby spinach
- 1/2 cup crumbled feta cheese
Directions
- In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
- Add the black pepper, nutmeg, oregano, and rice and stir to combine. Cook for 1 minute.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pan, and simmer for 15 minutes.
- Add the spinach and feta cheese and stir to combine. Cover the pan and simmer for an additional 5 minutes.
- Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and serve warm.
