  • 4 medium zucchini
  • 2 cans of tuna, drained

  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil

Directions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut the zucchini in half lengthwise and scoop out the flesh, leaving about 1/4 inch border along the edges. Reserve the scooped-out zucchini flesh for later use.
  3. In a bowl, combine the drained tuna, breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, dried basil, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  4. Fill the hollowed zucchini halves with the tuna mixture, pressing it down lightly to ensure it is tightly packed.
  5. Place the stuffed zucchini boats on the prepared baking sheet and bake for 25-30 minutes, or until the zucchini is tender and the filling is golden brown.
