These mini scotch eggs are a perfect appetizer or snack for any occasion. Made with a flavorful sausage mixture and a perfectly cooked egg, they are crispy on the outside and tender on the inside. Using the air fryer cuts down on the oil needed for frying, making them a healthier alternative to traditional scotch eggs.
Ingredients
- 6 large eggs
- 1/2 lb ground pork sausage
- 1/2 cup breadcrumbs
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika

- Peel eggs and set aside. In a bowl, combine sausage, breadcrumbs, salt, pepper, garlic powder, onion powder, and paprika. Divide mixture into 4 equal portions.
- Wrap each boiled egg with a portion of the sausage mixture, shaping into a ball. In a shallow dish, beat the remaining 2 eggs. Dip each sausage-coated egg in flour, then egg, then breadcrumbs.
