These mini scotch eggs are a perfect appetizer or snack for any occasion. Made with a flavorful sausage mixture and a perfectly cooked egg, they are crispy on the outside and tender on the inside. Using the air fryer cuts down on the oil needed for frying, making them a healthier alternative to traditional scotch eggs.

Ingredients

  • 6 large eggs
  • 1/2 lb ground pork sausage
  • 1/2 cup breadcrumbs
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • Cooking spray

Directions

  1. Place 4 eggs in a saucepan and cover with water. Bring to a boil over high heat, then reduce heat to low and simmer for 9 minutes. Remove from heat and place eggs in ice water to cool.
  2. Peel eggs and set aside. In a bowl, combine sausage, breadcrumbs, salt, pepper, garlic powder, onion powder, and paprika. Divide mixture into 4 equal portions.
  3. Wrap each boiled egg with a portion of the sausage mixture, shaping into a ball. In a shallow dish, beat the remaining 2 eggs. Dip each sausage-coated egg in flour, then egg, then breadcrumbs.
  4. Spray air fryer basket with cooking spray. Place eggs in the basket and spray the tops with cooking spray. Cook at 370°F for 10-12 minutes, turning halfway through, until golden brown and cooked through.
  5. Serve warm with your favorite dipping sauce or enjoy on their own!
