Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 cup mushrooms, chopped
  • 1/2 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon dried parsley
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 cups long grain white rice
  • 4 cups vegetable broth

Directions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion, garlic, celery, and mushrooms. Cook until vegetables are softened, about 5 minutes.
  3. Stir in thyme, sage, parsley, pepper, and salt. Cook for 1 minute.
  4. Add rice and vegetable broth to the pot. Bring to a boil.
  5. Reduce heat to low and cover the pot. Simmer for 20 minutes, or until rice is cooked through.
  6. Fluff with a fork before serving.
