Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 cup mushrooms, chopped

- 2 cups long grain white rice
- 4 cups vegetable broth
Directions
- Heat olive oil in a large pot over medium-high heat.
- Add onion, garlic, celery, and mushrooms. Cook until vegetables are softened, about 5 minutes.
- Stir in thyme, sage, parsley, pepper, and salt. Cook for 1 minute.
- Add rice and vegetable broth to the pot. Bring to a boil.
- Reduce heat to low and cover the pot. Simmer for 20 minutes, or until rice is cooked through.
