Ingredients

  • 2 pounds lamb stew meat, cut into chunks
  • 4 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 4 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large potatoes, peeled and cut into chunks
  • 4 large carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large Dutch oven or pot, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Add the lamb stew meat in batches and brown on all sides. Remove the browned meat from the pot and set aside.
  3. In the same pot, add the remaining 2 tablespoons of vegetable oil.
  4. Add the diced onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.
  5. Return the browned meat to the pot and pour in the beef broth and water.
  6. Add the bay leaves, dried thyme, salt, and black pepper. Stir to combine.
  7. Bring the liquid to a boil, then reduce the heat to low and cover the pot.
  8. Simmer for 1 hour, stirring occasionally.
  9. After 1 hour, add the potatoes, carrots, and parsnips to the pot.
  10. Cover the pot again and simmer for an additional hour, or until the meat is tender and the vegetables are cooked through.
  11. Stir in the frozen peas and simmer for another 5-10 minutes, until the peas are heated through.
  12. Remove the bay leaves and discard.
  13. Taste the stew and season with salt and pepper if needed.
  14. Garnish with chopped fresh parsley before serving.
