Ingredients
- 2 pounds lamb stew meat, cut into chunks
- 4 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 4 cups water
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large potatoes, peeled and cut into chunks
- 4 large carrots, peeled and sliced
- 2 parsnips, peeled and sliced
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
Directions
- In a large Dutch oven or pot, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the lamb stew meat in batches and brown on all sides. Remove the browned meat from the pot and set aside.
- In the same pot, add the remaining 2 tablespoons of vegetable oil.
- Add the diced onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.
- Return the browned meat to the pot and pour in the beef broth and water.
- Add the bay leaves, dried thyme, salt, and black pepper. Stir to combine.
- Bring the liquid to a boil, then reduce the heat to low and cover the pot.
- Simmer for 1 hour, stirring occasionally.
- After 1 hour, add the potatoes, carrots, and parsnips to the pot.
- Cover the pot again and simmer for an additional hour, or until the meat is tender and the vegetables are cooked through.
- Stir in the frozen peas and simmer for another 5-10 minutes, until the peas are heated through.
- Remove the bay leaves and discard.
- Taste the stew and season with salt and pepper if needed.
- Garnish with chopped fresh parsley before serving.
