Ingredients
- 4 large russet potatoes
- 1 small head of cabbage
- 1 large onion
- 4 tablespoons unsalted butter, divided
- 1 cup milk
- Salt and pepper to taste

- Peel the potatoes and cut them into small cubes. Place them in a pot, cover with water, and add salt. Bring to a boil and cook until tender, about 15 minutes. Drain the potatoes and return them to the pot.
- While the potatoes are cooking, core the cabbage and thinly slice it. Finely chop the onion.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until golden brown and caramelized, about 10 minutes. Remove from heat and set aside.
- In another pot, bring water to a boil and cook the sliced cabbage for about 5 minutes, or until tender. Drain the cabbage and set aside.
- In the pot with the cooked potatoes, add the remaining 2 tablespoons of butter, milk, salt, and pepper. Mash the potatoes until creamy and smooth.
- Fold in the cooked cabbage and caramelized onions into the mashed potatoes. Mix well to combine all the ingredients.
- Transfer the colcannon to a serving dish, garnish with a pat of butter, and serve hot.
