Semmelknoedel, also known as bread dumplings, is a traditional German dish that has been loved for generations. The soft and fluffy dumplings are made with simple ingredients like bread, milk, eggs, and onions. They are a perfect side dish for roasts, stews, or sausages. This delicious recipe will guide you through the process of making authentic semmelknoedel from scratch. Serve them with your favorite meat dishes and enjoy a taste of Germany.

Ingredients

  • 6 cups stale bread cubes
  • 1 cup warm milk
  • 3 eggs
  • 1 small onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup butter

Directions

  1. In a large bowl, combine the stale bread cubes and warm milk. Let it sit for about 10 minutes, allowing the bread to absorb the milk.
  2. In a separate bowl, beat the eggs and add the chopped onion, parsley, salt, black pepper, and nutmeg. Mix well.
  3. Pour the egg mixture over the soaked bread cubes. Gently mix until all ingredients are evenly combined.
  4. Cover the bowl with a clean kitchen towel and let the mixture rest for 30 minutes.
  5. After the resting time, the mixture should have thickened slightly. Using wet hands, shape the mixture into small dumplings, around the size of a tennis ball.
  6. In a large pot, bring water to a boil. Carefully add the dumplings to the boiling water and cook for about 20 minutes, or until they are firm and float to the top.
  7. Using a slotted spoon, remove the dumplings from the boiling water and transfer them to a plate.
  8. In a skillet, melt the butter over medium heat. Add the cooked dumplings and cook for another 5 minutes, turning them occasionally, until they are golden brown and crispy.
  9. Serve the Semmelknoedel hot as a side dish with your favorite meat dishes. Enjoy!
