Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup orzo
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/2 cup crumbled Gorgonzola cheese

Directions

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the diced onion and cook until softened and lightly golden, about 5 minutes.
  3. Add the garlic and cook for 1 more minute.
  4. Stir in the crushed tomatoes, vegetable broth, orzo, oregano, basil, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low and simmer until the orzo is cooked, about 10 minutes.
  6. Stir in the Gorgonzola cheese and let it melt into the soup.
  7. Serve warm.
