Ingredients
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
2 cups vegetable broth
1 cup orzo
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
1/2 cup crumbled Gorgonzola cheese
Directions
Heat the olive oil in a large soup pot over medium heat.
Add the diced onion and cook until softened and lightly golden, about 5 minutes.
Add the garlic and cook for 1 more minute.
Stir in the crushed tomatoes, vegetable broth, orzo, oregano, basil, salt, and pepper. Bring to a boil.
Reduce the heat to low and simmer until the orzo is cooked, about 10 minutes.
Stir in the Gorgonzola cheese and let it melt into the soup.
Serve warm.
