Ingredients

  • 1 package firm tofu, cut into cubes
  • 1/2 pound ground pork
  • 1/4 cup miso paste
  • 1/2 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon minced garlic
  • 3 cups cooked white or brown rice
  • 2 cups assorted vegetables, such as carrots, bell peppers, onions, and mushrooms
  • 2 tablespoons sesame seeds

Directions

  1. In a large skillet over medium-high heat, add the ground pork and cook until browned, about 5 minutes. Add the miso paste, soy sauce, sesame oil, ginger, and garlic and stir to combine. Cook for 2 minutes.
  2. Add the tofu cubes and cook until they are lightly browned, about 5 minutes.
  3. Add the cooked rice and vegetables and stir to combine. Cook until the vegetables are tender, about 5 minutes.
  4. Sprinkle with sesame seeds and serve.
