Ingredients

  • 1 red pepper
  • 1 jalapeño pepper
  • 1 green pepper
  • 4 cloves of garlic
  • 1/2 cup of olive oil
  • 1/4 cup of Parmesan cheese
  • 1/4 cup of pine nuts
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper

Directions

  1. Preheat the oven to 400°F.
  2. Place the red, jalapeño, and green peppers on a baking sheet.
  3. Roast the peppers in the oven for 20 minutes, or until the skins are blackened and charred.
  4. Remove the peppers from the oven, and place them in a bowl. Cover the bowl with a lid or plastic wrap, and let the peppers steam for 10 minutes.
  5. Once the peppers have cooled, remove the skins, stems, and seeds. Place the peppers in a food processor.
  6. Add the garlic, olive oil, Parmesan cheese, pine nuts, salt, and pepper to the food processor and blend until smooth.
  7. Serve as a dip or spread.
