Ingredients

  • 2 cucumbers, sliced
  • 1/2 onion, diced
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 tablespoons minced fresh herbs (optional)

Directions

  1. In a large bowl, combine cucumbers and onion.
  2. In a small bowl, whisk together the vinegar, sugar, salt and pepper.
  3. Add the olive oil and whisk until combined.
  4. Pour the dressing over the cucumbers and onion and toss to combine.
  5. Add the herbs, if using, and toss to combine.
  6. Serve chilled or at room temperature.
