Ingredients

  • 1 head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup tomato sauce
  • 2 tablespoons white wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon garlic powder

Directions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss the broccoli florets with the olive oil and season with salt and pepper. Place the broccoli on the prepared baking sheet and roast for 15 minutes.
  3. Meanwhile, in a medium bowl, whisk together the tomato sauce, white wine vinegar, oregano, basil, and garlic powder. Taste and adjust seasoning, if necessary.
  4. Once the broccoli is finished roasting, remove from the oven and transfer to a serving bowl. Pour the tomato herb vinaigrette over the broccoli and toss to combine.
  5. Serve immediately.
