Ingredients

  • 2 large taro roots, peeled and cut into thin fries
  • 1/2 cup of all-purpose flour
  • 2 eggs, beaten
  • 1 cup of unsweetened coconut flakes
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Vegetable or canola oil for frying

Directions

  1. In a large bowl, mix together the flour, eggs, coconut flakes, garlic powder, salt, and pepper until everything is evenly combined.
  2. Heat the oil in a large skillet or deep fryer over medium-high heat.
  3. Dip the taro fries into the egg mixture, then into the coconut flakes, ensuring that each fry is coated evenly.
  4. Carefully add the fries to the hot oil and cook for 5-7 minutes, flipping occasionally, until the fries are golden brown and crispy.
  5. Remove the fries from the oil with a slotted spoon and place on a paper towel-lined plate to remove any excess oil.
