Ingredients

  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups corn kernels, fresh or frozen
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Directions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the broth, corn, salt and pepper, and bring to a simmer.
  4. Reduce the heat to low and simmer for 15 minutes.
  5. Remove the pot from the heat and stir in the cream.
  6. Serve hot.
