1 head of cauliflower, chopped into bite-sized pieces
2 tablespoons olive oil
1/2 cup unsweetened almond milk
1/2 cup nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup vegan butter
2 tablespoons arrowroot powder
1 cup vegan cheese shreds
1/4 cup breadcrumbs
Directions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, combine the cauliflower, olive oil, almond milk, nutritional yeast, garlic powder, onion powder, salt, and black pepper. Toss to coat the cauliflower evenly.
Spread the cauliflower onto the prepared baking sheet and bake for 25 minutes, stirring halfway through, until golden and crisp.
Meanwhile, in a medium saucepan, melt the vegan butter over medium heat. Whisk in the arrowroot powder and cook, stirring, until the mixture thickens, about 2 minutes.
Remove from heat and whisk in the vegan cheese and almond milk until melted and smooth.
Remove the cauliflower from the oven and transfer to a 9x13-inch baking dish. Pour the cheese sauce over the cauliflower and stir to combine.
Sprinkle the breadcrumbs over the top of the cauliflower and bake for 15 minutes, until golden and bubbly.
Remove from oven and let cool for 10 minutes before serving.
