Ingredients

  • 1 (7-ounce) can of tuna, drained
  • 1 cup of cooked pasta
  • 1/2 cup of chopped celery
  • 1/2 cup of chopped carrots
  • 1/2 cup of chopped red bell pepper
  • 1/4 cup of chopped red onion
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the tuna, pasta, celery, carrots, bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the tuna and vegetable mixture and toss to combine.
  4. Chill for at least 1 hour before serving.
