Ingredients

  • 1 (12-pound) turkey, neck and giblets removed
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon poultry seasoning
  • 1/4 cup water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Rinse the turkey inside and out with cold water; pat dry with paper towels.
  3. Brush the turkey evenly with the olive oil and melted butter.
  4. In a small bowl, mix the salt, pepper, and poultry seasoning. Rub the mixture all over the turkey.
  5. Place the turkey in a roasting pan. Add the water to the bottom of the pan.
  6. Roast the turkey for 3 to 4 hours, until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (75 degrees C).
  7. Remove the turkey from the oven and let it rest for 10 minutes before carving.
