Ingredients
- 1 whole chicken (3-4 pounds)
- 2 tablespoons olive oil
- 2 tablespoons paprika
- 1 tablespoon brown sugar
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dried oregano
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 can of beer (12 ounces)
- 1 handful of wood chips (optional)
Directions
- Preheat your grill to medium heat. If using wood chips, soak them in water for 30 minutes.
- In a small bowl, mix together the paprika, brown sugar, chili powder, garlic powder, onion powder, dried oregano, salt, and black pepper to make a spice rub.
- Remove any giblets from the chicken and pat it dry with paper towels. Rub the chicken all over with olive oil.
- Sprinkle the spice rub evenly over the chicken, making sure to coat all sides.
- If using wood chips, drain them and place them in a smoker box or a foil packet with holes poked in it. Place the wood chips directly on the grill grates.
- Open the beer can and take a few sips to empty about 1/4 of the can. Insert the beer can into the cavity of the chicken, so it stands upright with the can in the cavity and the chicken legs forming a tripod.
- Place the chicken, still on the beer can, on the grill grates away from direct heat. Close the lid and cook for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
- Carefully remove the chicken from the grill, making sure not to spill the hot beer. Let the chicken rest for about 10 minutes before removing the beer can and carving.
