This Moroccan-style chicken dish is a perfect blend of savory and sweet flavors. The tender chicken is seasoned with a blend of traditional Moroccan spices, served on a bed of spiralized butternut squash noodles for a healthy twist on a classic Moroccan dish.
Ingredients
- 2 chicken breasts
- 1 butternut squash
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Directions
- Spiralize the butternut squash into noodles and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside.
- In the same skillet, add onion and garlic. Cook until softened, about 3 minutes.
- Add cumin, coriander, cinnamon, ginger, and cayenne pepper. Stir to combine.
- Add chicken broth and bring to a simmer. Return chicken to the skillet and simmer for 10 minutes, or until chicken is cooked through.
- Add butternut squash noodles and toss to combine. Cook for an additional 5 minutes, until noodles are tender.
- Season with salt and pepper, and garnish with parsley before serving.
