Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Fresh parsley, for garnish

Directions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Dredge the chicken breasts in flour, shaking off any excess.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  4. Add the chicken breasts to the skillet and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  5. In the same skillet, melt the remaining 2 tablespoons of butter.
  6. Add the minced garlic and sliced mushrooms to the skillet and cook until the mushrooms are browned and tender, about 5 minutes.
  7. Stir in the Madeira wine and chicken broth, scraping the bottom of the skillet to deglaze it.
  8. Bring the mixture to a simmer and let it cook for 10 minutes, or until the liquid has reduced by half.
  9. Stir in the heavy cream and cook for an additional 5 minutes, or until the sauce has thickened.
  10. Return the cooked chicken breasts to the skillet and spoon the sauce over them.
  11. Simmer for 2-3 minutes, or until the chicken is heated through.
  12. Garnish with fresh parsley and serve hot.
  13. Enjoy your delicious Chicken Madeira!
