  • 1/2 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 cup diced bell peppers (red, green, and yellow)
  • 1/2 cup diced onions
  • 1/2 cup pineapple chunks
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Sesame seeds and chopped green onions, for garnish

Directions

  1. Season the chicken pieces with salt and black pepper.
  2. Coat the chicken pieces in cornstarch, shaking off any excess.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the coated chicken pieces to the skillet and cook until golden brown and crispy, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced bell peppers and onions. Cook until they are slightly tender, about 2-3 minutes.
  6. Add the pineapple chunks to the skillet and sauté for another minute.
  7. In a small bowl, whisk together the ketchup, rice vinegar, soy sauce, and honey.
  8. Pour the sauce mixture into the skillet and stir to combine with the vegetables.
  9. In a separate small bowl, mix cornstarch with water to create a slurry.
  10. Pour the slurry into the skillet and stir well until the sauce thickens, about 2-3 minutes.
  11. Return the cooked chicken to the skillet and toss it in the sweet and sour sauce until well coated.
  12. Garnish with sesame seeds and chopped green onions.
  13. Serve hot with steamed rice.
