Ingredients
- 2 pounds pork shoulder, cut into cubes
- 3 cloves garlic, minced
- 1 tablespoon cumin powder
- 1 tablespoon paprika
- 1 tablespoon oregano
- 1 teaspoon cayenne pepper
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Directions
- In a large mixing bowl, combine the minced garlic, cumin powder, paprika, oregano, cayenne pepper, vegetable oil, salt, and pepper. Mix well to form a paste.
- Add the pork cubes into the bowl and toss until the meat is well coated. Let it marinate for at least 15 minutes to allow the flavors to penetrate.
- Heat a large skillet over medium-high heat and add the marinated pork. Cook for about 5 minutes or until the pork is browned on all sides.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the chopped onion and sliced bell peppers. Sauté for about 3-4 minutes or until the vegetables are tender.
- Add the tomato paste, chicken broth, soy sauce, and lime juice to the skillet. Stir well to combine all the ingredients.
- Return the browned pork to the skillet and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes or until the pork is cooked through and tender.
- Once the pork is cooked, remove from heat and let it rest for a few minutes.
- Garnish with freshly chopped cilantro and serve hot with rice or warm tortillas.
