Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup blackberry jam
  • 1/2 cup chopped pecans
  • For the cream cheese frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Begin and end with the dry ingredients.
  6. Fold in the blackberry jam and chopped pecans until fully combined.
  7. Divide the batter equally between the prepared cake pans and smooth the tops with a spatula.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. To prepare the cream cheese frosting, beat the softened cream cheese and butter together in a medium mixing bowl until creamy and well combined.
  11. Gradually add the powdered sugar, one cup at a time, while continuing to beat on low speed.
  12. Stir in the vanilla extract and beat on medium-high speed until the frosting is smooth and fluffy.
  13. Once the cakes have cooled completely, place one cake layer on a serving plate or cake stand.
  14. Spread a generous amount of cream cheese frosting over the top of the cake layer.
  15. Place the second cake layer on top and frost the entire cake with the remaining cream cheese frosting.
  16. Garnish with fresh blackberries and pecans, if desired.
  17. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld and the frosting to set.
  18. Slice and serve the delicious homemade blackberry jam cake.
