Ingredients

  • 2 lbs beef sirloin tips, cut into cubes
  • 1 onion, diced
  • 8 oz mushrooms, sliced

  • 1 cup beef broth

  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp cornstarch
  • 2 tbsp water

Directions

  1. Season the beef tips with salt and pepper.
  2. Turn on the Instant Pot and select the sauté mode.
  3. Add a tablespoon of oil and brown the beef tips in batches. Set aside.
  4. Add the onions and mushrooms to the pot and sauté until softened.
  5. Stir in the garlic, tomato paste, Worcestershire sauce, and thyme.
  6. Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
  7. Return the beef tips to the pot and stir well.
  8. Close the lid, set the valve to sealing, and cook on high pressure for 20 minutes.
  9. Once done, do a quick release and carefully open the lid.
  10. In a small bowl, mix the cornstarch with water to make a slurry.
  11. Add the slurry to the pot and stir until the gravy thickens.
  12. Serve the beef tips with mushroom gravy over mashed potatoes or egg noodles.
  13. Garnish with fresh parsley before serving.
