Ingredients
- 2 lbs beef sirloin tips, cut into cubes
- 1 onion, diced
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp cornstarch
- 2 tbsp water
- Fresh parsley for garnish
Directions
- Season the beef tips with salt and pepper.
- Turn on the Instant Pot and select the sauté mode.
- Add a tablespoon of oil and brown the beef tips in batches. Set aside.
- Add the onions and mushrooms to the pot and sauté until softened.
- Stir in the garlic, tomato paste, Worcestershire sauce, and thyme.
- Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
- Return the beef tips to the pot and stir well.
- Close the lid, set the valve to sealing, and cook on high pressure for 20 minutes.
- Once done, do a quick release and carefully open the lid.
- In a small bowl, mix the cornstarch with water to make a slurry.
- Add the slurry to the pot and stir until the gravy thickens.
- Serve the beef tips with mushroom gravy over mashed potatoes or egg noodles.
- Garnish with fresh parsley before serving.
