Ingredients

  • 1 pound of pasta (I used rotini)
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup chopped fresh parsley

Directions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the olive oil, red wine vinegar, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Add the cooled pasta and mix to combine.
  4. Add the red onion, bell peppers, and parsley and mix to combine.
  5. Chill for at least 30 minutes before serving.
