Ingredients
- 1 large sweet potato, peeled and cut into 1-inch cubes
- 2 large carrots, peeled and cut into 1-inch cubes
- 2 large parsnips, peeled and cut into 1-inch cubes
- 1 large red onion, peeled and sliced
- 2 tablespoons vegetable oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 1 teaspoon ground black pepper
- 1 teaspoon sea salt
- 1/2 teaspoon ground cinnamon
Directions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix together the sweet potato, carrots, parsnips, and red onion. Drizzle with the oil and mix until everything is evenly coated.
- In a small bowl, mix together the coriander, cumin, turmeric, garlic powder, onion powder, garam masala, paprika, pepper, salt, and cinnamon.
- Sprinkle the spice mixture over the vegetables and mix until everything is evenly coated.
- Spread the vegetables in a single layer on a baking sheet and bake for 40 minutes, stirring halfway through.
- Remove from the oven and serve hot.
