Ingredients
1 cup of uncooked lentils
2 tablespoons of olive oil
1 onion, diced
2 cloves of garlic, minced
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of paprika
1/2 teaspoon of turmeric
1/2 teaspoon of cinnamon
1/4 teaspoon of cayenne pepper

2 cups of vegetable broth

Directions
In a large pot, heat the olive oil over medium heat.
Add the onion and garlic, and cook until softened, about 5 minutes.
Add the spices (cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, and salt) and stir to combine.
Add the lentils and vegetable broth and bring to a boil.
Reduce heat to low and simmer until the lentils are tender, about 15 minutes.
Stir in the parsley and serve.
