Ingredients

  • 1 cup of uncooked lentils
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of sea salt
  • 2 cups of vegetable broth
  • 1/2 cup of chopped fresh parsley

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and cook until softened, about 5 minutes.
  3. Add the spices (cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, and salt) and stir to combine.
  4. Add the lentils and vegetable broth and bring to a boil.
  5. Reduce heat to low and simmer until the lentils are tender, about 15 minutes.
  6. Stir in the parsley and serve.
