Ingredients
- 1 cup of uncooked lentils
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of cayenne pepper
- 1/2 teaspoon of sea salt
- 2 cups of vegetable broth
- 1/2 cup of chopped fresh parsley
Directions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and cook until softened, about 5 minutes.
- Add the spices (cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, and salt) and stir to combine.
- Add the lentils and vegetable broth and bring to a boil.
- Reduce heat to low and simmer until the lentils are tender, about 15 minutes.
- Stir in the parsley and serve.
