1/4 cup tapioca pearls
1/2 cup white rice
4 cups milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
Directions
In a medium saucepan, bring 3 cups of the milk to a boil.
Add the tapioca pearls and rice to the boiling milk and stir.
Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
Add the remaining 1 cup of milk, the sugar and the vanilla extract and stir to combine.
Simmer for an additional 5 minutes, stirring frequently.
Remove the pudding from the heat and let cool for 10 minutes before serving.
