Ingredients
- 1/2 cup almonds
- 1/2 cup cashews
- 1/4 cup dried cranberries
- 1/4 cup dried apricots, chopped
- 1/4 cup shredded coconut
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/4 teaspoon sea salt
- 1/4 cup honey
- 1 teaspoon vanilla extract
Directions
- In a food processor, add the almonds, cashews, cranberries, apricots, coconut, cinnamon, nutmeg, cardamom, ginger, and salt. Pulse on high until the mixture is finely ground.
- Add the honey and vanilla extract and pulse until the mixture comes together and forms a dough.
- Using a tablespoon, scoop out the dough and roll into balls.
- Store the balls in an airtight container in the refrigerator for up to one week.
