Ingredients

  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/4 cup dried cranberries
  • 1/4 cup dried apricots, chopped
  • 1/4 cup shredded coconut
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon sea salt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Directions

  1. In a food processor, add the almonds, cashews, cranberries, apricots, coconut, cinnamon, nutmeg, cardamom, ginger, and salt. Pulse on high until the mixture is finely ground.
  2. Add the honey and vanilla extract and pulse until the mixture comes together and forms a dough.
  3. Using a tablespoon, scoop out the dough and roll into balls.
  4. Store the balls in an airtight container in the refrigerator for up to one week.
