Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup fresh cranberries
  • 1/2 cup milk
  • 2 tablespoons orange juice
  • 1 large egg
  • For the glaze:
  • 1/4 cup confectioners' sugar
  • 1 tablespoon orange juice

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix together the melted butter, cranberries, milk, orange juice, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool for 10 minutes before removing from the pan.
  7. In a small bowl, mix together the confectioners' sugar and orange juice to make the glaze. Drizzle the glaze over the cooled bread before serving.
