Apple, Avocado and Hearts of Palm Salad
Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup butter, melted
1 cup fresh cranberries
1/2 cup milk
2 tablespoons orange juice
1 large egg
For the glaze:
1/4 cup confectioners' sugar
1 tablespoon orange juice
Directions
Preheat oven to 350°F.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, mix together the melted butter, cranberries, milk, orange juice, and egg.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool for 10 minutes before removing from the pan.
In a small bowl, mix together the confectioners' sugar and orange juice to make the glaze. Drizzle the glaze over the cooled bread before serving.
