Apple, Avocado and Hearts of Palm Salad

Ingredients

  • 2 apples, cored and diced
  • 1 avocado, peeled, pitted and diced
  • 1 can (14 ounces) hearts of palm, drained and sliced
  • 1/4 cup diced red onion
  • 1/2 cup chopped fresh parsley
  • 1/4 cup white wine vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the apples, avocado, hearts of palm, red onion and parsley.
  2. In a small bowl, whisk together the vinegar, olive oil, honey and mustard. Pour over the salad and mix to combine.
  3. Season with salt and pepper to taste.
  4. Serve immediately or refrigerate until ready to serve.
