Ingredients
- 2 apples, cored and diced
- 1 avocado, peeled, pitted and diced
- 1 can (14 ounces) hearts of palm, drained and sliced
- 1/4 cup diced red onion
- 1/2 cup chopped fresh parsley
- 1/4 cup white wine vinegar
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Directions
- In a large bowl, combine the apples, avocado, hearts of palm, red onion and parsley.
- In a small bowl, whisk together the vinegar, olive oil, honey and mustard. Pour over the salad and mix to combine.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate until ready to serve.
