Ingredients
- 1 cup bulgur wheat
- 2 cups boiling water
- 1/2 cup olive oil
- 1/3 cup freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 bunches fresh parsley, chopped
- 2 tomatoes, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup red onion, chopped
Directions
- In a large bowl, combine the bulgur wheat and boiling water. Cover and let stand for 20 minutes.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.
- Stir the parsley, tomatoes, mint, and onion into the bulgur wheat.
- Pour the dressing over the tabbouleh and mix until all ingredients are evenly coated.
- Serve chilled or at room temperature.
