Ingredients

  • 1 medium zucchini, grated
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 eggs, lightly beaten
  • 1/2 cup grated parmesan cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute. Add zucchini and cook until soft, about 5 minutes.
  4. Stir in oregano, basil, thyme, red pepper flakes, salt, and black pepper.
  5. Remove from heat and let cool for 10 minutes.
  6. In a medium bowl, combine eggs and parmesan cheese. Add cooled zucchini mixture and stir to combine.
  7. Pour mixture into a 9-inch pie pan.
  8. Bake for 25 minutes or until the center is set.
  9. Let cool before slicing.
