Ingredients
- 1 medium zucchini, grated
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 eggs, lightly beaten
- 1/2 cup grated parmesan cheese
Directions
- Preheat oven to 375 degrees F.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute. Add zucchini and cook until soft, about 5 minutes.
- Stir in oregano, basil, thyme, red pepper flakes, salt, and black pepper.
- Remove from heat and let cool for 10 minutes.
- In a medium bowl, combine eggs and parmesan cheese. Add cooled zucchini mixture and stir to combine.
- Pour mixture into a 9-inch pie pan.
- Bake for 25 minutes or until the center is set.
- Let cool before slicing.
