Ingredients
1 medium zucchini, grated
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 eggs, lightly beaten

Directions
Preheat oven to 375 degrees F.
In a large skillet, heat olive oil over medium heat. Add onion and cook until soft, about 5 minutes.
Add garlic and cook for 1 minute. Add zucchini and cook until soft, about 5 minutes.
Stir in oregano, basil, thyme, red pepper flakes, salt, and black pepper.
Remove from heat and let cool for 10 minutes.
In a medium bowl, combine eggs and parmesan cheese. Add cooled zucchini mixture and stir to combine.
Pour mixture into a 9-inch pie pan.
Bake for 25 minutes or until the center is set.
Let cool before slicing.
