Ingredients

  • 2 lbs pork belly, cut into cubes
  • 1/4 cup fish sauce
  • 3 tablespoons sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup water
  • 2 green onions, chopped
  • 1 red chili pepper, chopped (optional)

Directions

  1. In a bowl, combine the fish sauce, sugar, garlic, and black pepper. Add the pork cubes and mix to coat evenly.
  2. Heat the oil in a large skillet over medium-high heat. Add the pork and cook, stirring occasionally, until browned, about 5 minutes.
  3. Add the soy sauce, rice vinegar, and water to the skillet. Bring to a boil, then reduce the heat to low. Simmer, stirring occasionally, until the pork is tender and the sauce is thickened, about 20 minutes.
  4. Stir in the green onions and chili pepper (if using). Cook for 1 minute longer.
  5. Serve over rice or noodles.
