Ingredients

  • 1 pound pork tenderloin, cut into cubes
  • 1/2 pound sea shells, cooked according to package directions
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup frozen peas

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Add pork cubes and cook until lightly browned, about 5 minutes.
  2. Add garlic, onion, bell pepper, carrots and celery. Cook until vegetables are tender, about 5 minutes.
  3. Add chicken broth, oregano, thyme, salt and pepper. Bring to a boil, reduce heat and simmer for 15 minutes.
  4. Add sea shells and frozen peas and cook until heated through, about 5 minutes.
  5. Serve hot.
