Ingredients
- 1 pound pork tenderloin, cut into cubes
- 1/2 pound sea shells, cooked according to package directions
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1/2 cup frozen peas
Directions
- Heat olive oil in a large skillet over medium-high heat. Add pork cubes and cook until lightly browned, about 5 minutes.
- Add garlic, onion, bell pepper, carrots and celery. Cook until vegetables are tender, about 5 minutes.
- Add chicken broth, oregano, thyme, salt and pepper. Bring to a boil, reduce heat and simmer for 15 minutes.
- Add sea shells and frozen peas and cook until heated through, about 5 minutes.
- Serve hot.
