Ingredients
1 pound pork tenderloin, cut into cubes
1/2 pound sea shells, cooked according to package directions
2 tablespoons olive oil
2 cloves garlic, minced
1 onion, diced
1 bell pepper, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
1 cup chicken broth
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper, to taste
1/2 cup frozen peas
Directions
Heat olive oil in a large skillet over medium-high heat. Add pork cubes and cook until lightly browned, about 5 minutes.
Add garlic, onion, bell pepper, carrots and celery. Cook until vegetables are tender, about 5 minutes.
Add chicken broth, oregano, thyme, salt and pepper. Bring to a boil, reduce heat and simmer for 15 minutes.
Add sea shells and frozen peas and cook until heated through, about 5 minutes.
Serve hot.
