1 lb beef (sirloin steak, flank steak, or skirt steak)
1/4 cup soy sauce
1/4 cup Chinese rice wine or sake
1 tablespoon sesame oil
1 tablespoon cornstarch
3 cloves garlic, minced
1 tablespoon freshly grated ginger
2 tablespoons chili paste or chili garlic sauce
3 tablespoons vegetable oil
1 red bell pepper, cut into strips
1 onion, cut into wedges
2 carrots, cut into matchsticks
1/4 cup chicken stock or water
1/4 cup roasted peanuts, chopped (optional)
Directions
In a medium bowl, combine the beef, soy sauce, rice wine, sesame oil, cornstarch, garlic, and ginger. Mix until the beef is evenly coated and let marinate for 15 minutes.
Heat a wok or large skillet over high heat. Add the vegetable oil and swirl to coat the pan. Add the marinated beef and stir-fry for 3 minutes, until lightly browned.
Add the bell pepper, onion, and carrots and stir-fry for another 3 minutes, stirring constantly.
Add the chili paste and chicken stock and stir-fry for 2 minutes more, until the vegetables are tender.
Stir in the peanuts, if using, and serve over steamed rice.
