Ingredients

  • 2 large sweet potatoes

Directions

  1. Preheat the oven to 400°F (200°C).

  5. Transfer the dough to a floured surface and divide it into four equal parts. Roll each part into a long rope, about 1/2 inch thick.
  6. Cut the ropes into bite-sized pieces, about 1 inch long. Press the back of a fork onto each gnocchi to create ridges for better sauce adherence.
  7. Bring a large pot of salted water to a boil. Add the gnocchi and cook for about 2-3 minutes, or until they float to the surface. Remove them with a slotted spoon and set aside.
  8. In a large skillet, melt the butter over medium heat. Cook the butter until it turns a light golden brown color and develops a nutty aroma, stirring occasionally.
  9. Add the nduja to the skillet and cook for an additional 2 minutes, or until the nduja has melted and combined with the butter.
