Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup raspberry preserves
  • 1/4 cup fresh raspberries

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix together graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy. Add eggs, one at a time, mixing well after each addition.
  4. Pour half of the cream cheese mixture over the graham cracker crust in the pan.
  5. In a small saucepan, heat raspberry preserves over low heat until melted and smooth. Drop spoonfuls of the melted preserves onto the cream cheese mixture in the pan. Use a knife to gently swirl the preserves into the cream cheese mixture.
  6. Pour the remaining cream cheese mixture over the preserves and smooth the top with a spatula.
  7. Place the springform pan onto a baking sheet and bake in the preheated oven for 50-60 minutes, or until the center is set and the top is lightly browned.
  8. Remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set.
  9. Before serving, garnish the top with fresh raspberries.
  10. Slice and serve chilled. Enjoy!
