Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small tortillas
  • 1/2 cup crushed tortilla chips
  • Cilantro (for garnish)

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, cheddar cheese, diced onion, diced bell pepper, diced tomatoes, chili powder, cumin, garlic powder, salt, and black pepper. Stir well to combine.
  3. Place half of the tortillas in the bottom of a greased 9x13-inch baking dish, overlapping slightly. Spoon half of the chicken mixture over the tortillas and spread evenly. Repeat the layers with the remaining tortillas and chicken mixture.
  4. Sprinkle the crushed tortilla chips over the top of the casserole.
  5. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro before serving.
