Directions

  1. In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled and cubed butter, then use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
  2. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix. Divide the dough into two equal portions, shape each into a disc, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
  3. Preheat the oven to 425°F (220°C).
  4. In a separate large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, all-purpose flour, ground cinnamon, ground nutmeg, and lemon juice. Mix well to coat the apples evenly.
  5. Remove one disc of dough from the refrigerator and roll it out on a lightly floured surface until it is about 12 inches in diameter. Carefully transfer the rolled-out dough to a 9-inch pie dish, gently pressing it into the bottom and sides.
