Ingredients
3 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 teaspoons grated fresh ginger
1 teaspoon ground cumin

2 large sweet potatoes, peeled and cubed
4 cups vegetable broth

Directions
Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté for 4-5 minutes until the onion is softened.
Add the ginger, cumin, coriander, turmeric, and cardamom and sauté for 1 minute.
Add the sweet potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the sweet potatoes are tender.
Meanwhile, combine the cashews, nutritional yeast, salt, and pepper in a blender and blend until creamy and smooth.
Add the cashew mixture to the soup and simmer for 5 minutes. Add the cilantro and stir to combine.
Serve hot with a sprinkle of cilantro on top.
