Ingredients

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 2 large sweet potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1/2 cup raw cashews
  • 1/4 cup nutritional yeast
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté for 4-5 minutes until the onion is softened.
  2. Add the ginger, cumin, coriander, turmeric, and cardamom and sauté for 1 minute.
  3. Add the sweet potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the sweet potatoes are tender.
  4. Meanwhile, combine the cashews, nutritional yeast, salt, and pepper in a blender and blend until creamy and smooth.
  5. Add the cashew mixture to the soup and simmer for 5 minutes. Add the cilantro and stir to combine.
  6. Serve hot with a sprinkle of cilantro on top.
