Ingredients

  • 2 tablespoons olive oil
  • 2 ½ pounds brisket
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 2 ½ cups Guinness beer
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a Dutch oven over medium-high heat. Add the brisket and cook until browned on both sides, about 8 minutes.
  2. Add the onion, carrots, celery, garlic, and bay leaf and cook until the vegetables are softened, about 5 minutes.
  3. Add the Guinness, tomato paste, sugar, Worcestershire sauce, and thyme and bring to a boil. Reduce the heat to low, cover, and simmer for 1 hour.
  4. Uncover and simmer until the brisket is tender, about 1 hour more.
  5. Season with salt and pepper to taste.
  6. Serve the brisket with the vegetables and Guinness gravy.
