Ingredients
2 tablespoons olive oil
2 ½ pounds brisket
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 bay leaf
2 ½ cups Guinness beer
2 tablespoons tomato paste
1 teaspoon sugar
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper, to taste
Directions
Heat the olive oil in a Dutch oven over medium-high heat. Add the brisket and cook until browned on both sides, about 8 minutes.
Add the onion, carrots, celery, garlic, and bay leaf and cook until the vegetables are softened, about 5 minutes.
Add the Guinness, tomato paste, sugar, Worcestershire sauce, and thyme and bring to a boil. Reduce the heat to low, cover, and simmer for 1 hour.
Uncover and simmer until the brisket is tender, about 1 hour more.
Season with salt and pepper to taste.
Serve the brisket with the vegetables and Guinness gravy.
