Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups yellow squash, diced
  • 2 cups vegetable broth
  • 1/4 cup fresh dill, chopped
  • Salt and pepper, to taste
  • Optional: Greek yogurt, for topping

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onions and garlic and cook until softened, about 5 minutes.
  3. Add the yellow squash and cook until lightly browned, about 5 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce heat to medium-low and let simmer for 15 minutes.
  6. Remove from heat and let cool slightly.
  7. Transfer the soup to a blender and blend until smooth.
  8. Return the soup to the pot and stir in the dill.
  9. Season with salt and pepper, to taste.
  10. Serve chilled with a dollop of Greek yogurt, if desired.
