  • 1 cup dried lentils
  • 4 cups vegetable broth

  • 2 tablespoons maple syrup

Directions

  1. Rinse the lentils under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, and sauté until they start to soften, about 5 minutes.
  3. Add the minced garlic, cumin, turmeric, paprika, dried thyme, salt, and black pepper to the pot. Stir well and cook for another minute until fragrant.
