Ingredients
- 1 medium-sized pumpkin
- 1 cup crumbled feta cheese
- 1 cup cooked spinach
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1/2 teaspoon freshly ground black pepper
- Salt, to taste
- 1/4 cup olive oil
Directions
- Preheat oven to 350°F (175°C).
- Cut the top off the pumpkin and scoop out all the seeds and stringy bits. Reserve the top.
- In a bowl, mix together the feta, spinach, ricotta, Parmesan, parsley, garlic, pepper and salt. Stuff the pumpkin with the cheese mixture.
- Drizzle the olive oil over the pumpkin and replace the top. Place the pumpkin in a baking dish.
- Bake in preheated oven for 45 minutes, or until the pumpkin is tender and the filling is heated through.
- Remove from oven and serve warm.
