Ingredients

  • 1 medium-sized pumpkin
  • 1 cup crumbled feta cheese
  • 1 cup cooked spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1/2 teaspoon freshly ground black pepper
  • Salt, to taste
  • 1/4 cup olive oil

Directions

  1. Preheat oven to 350°F (175°C).
  2. Cut the top off the pumpkin and scoop out all the seeds and stringy bits. Reserve the top.
  3. In a bowl, mix together the feta, spinach, ricotta, Parmesan, parsley, garlic, pepper and salt. Stuff the pumpkin with the cheese mixture.
  4. Drizzle the olive oil over the pumpkin and replace the top. Place the pumpkin in a baking dish.
  5. Bake in preheated oven for 45 minutes, or until the pumpkin is tender and the filling is heated through.
  6. Remove from oven and serve warm.
