Ingredients
- 6 slices of bacon
- 2 cod fillets
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Directions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together the breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, oregano, salt, and pepper.
- Lay the cod fillets on a cutting board and season both sides with salt and pepper.
- Divide the breadcrumb mixture between the two fillets and pat it down onto the fish.
- Wrap each fillet in three slices of bacon and secure the ends with toothpicks.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Once the oil is hot, add the bacon-wrapped cod to the pan and cook for 3-4 minutes per side, or until the bacon is lightly browned.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the cod is cooked through.
