Ingredients
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup milk
- 1/2 cup strawberry jam
- 1/2 cup cream cheese, softened
- 1/4 cup butter, softened
- 2 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 4-5 large strawberries for garnish
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9-inch round cake pan.
- In a large bowl, cream together the 1/2 cup butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder, and baking soda, stir into the creamed mixture alternately with the milk. Spread evenly into the prepared pan.
- Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes in the pan, then turn out onto a wire rack and cool completely.
- Spread the strawberry jam over the top of the cooled cake.
- In a medium bowl, beat together the cream cheese, 1/4 cup butter, confectioners' sugar, and 1 teaspoon vanilla until light and fluffy. Beat in the 2 tablespoons of milk until frosting is of desired consistency.
- Spread the frosting over the cake. Garnish with sliced strawberries.
