Ingredients

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk
  • 1/2 cup strawberry jam
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 4-5 large strawberries for garnish

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9-inch round cake pan.
  2. In a large bowl, cream together the 1/2 cup butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking powder, and baking soda, stir into the creamed mixture alternately with the milk. Spread evenly into the prepared pan.
  4. Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes in the pan, then turn out onto a wire rack and cool completely.
  5. Spread the strawberry jam over the top of the cooled cake.
  6. In a medium bowl, beat together the cream cheese, 1/4 cup butter, confectioners' sugar, and 1 teaspoon vanilla until light and fluffy. Beat in the 2 tablespoons of milk until frosting is of desired consistency.
  7. Spread the frosting over the cake. Garnish with sliced strawberries.
