Ingredients
- 1 whole chicken, about 2-3 pounds
- 1/4 cup Chinese black vinegar
- 1/4 cup Shaoxing wine
- 3 tablespoons sugar
- 3 slices of ginger
- 2 cloves of garlic, smashed
- 2 scallions, cut into thirds
Directions
- Wash and pat dry the chicken.
- In a pot, combine all the ingredients and bring to a boil.
- Add the chicken to the pot and reduce the heat to low. Simmer for about 20 minutes or until the chicken is cooked through.
- Remove the chicken from the pot and let it rest for 5 minutes.
- Serve the chicken with the cooking liquid.
