Ingredients

  • 1 whole chicken, about 2-3 pounds
  • 1/4 cup Chinese black vinegar
  • 1/4 cup Shaoxing wine
  • 3 tablespoons sugar
  • 3 slices of ginger
  • 2 cloves of garlic, smashed
  • 2 scallions, cut into thirds

Directions

  1. Wash and pat dry the chicken.
  2. In a pot, combine all the ingredients and bring to a boil.
  3. Add the chicken to the pot and reduce the heat to low. Simmer for about 20 minutes or until the chicken is cooked through.
  4. Remove the chicken from the pot and let it rest for 5 minutes.
  5. Serve the chicken with the cooking liquid.
