Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1/2 cup confectioners' sugar
  • 1/4 cup heavy cream

Directions

  1. Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, until everything is combined.
  3. Pour the batter into the prepared pan and spread it out evenly. Arrange the strawberry slices on top of the batter. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  4. When the cake is finished baking, let it cool in the pan for 10 minutes. Then, invert it onto a cooling rack and cool completely.
  5. To make the glaze, whisk together the confectioners' sugar, cream, and 1 tablespoon of water until smooth. Drizzle the glaze over the cooled cake and serve.
