In a large bowl, dissolve the yeast in warm water and add sugar. Let the mixture stand for 5 minutes until it is foamy.
Add the olive oil, flour, salt and romano cheese and mix until a soft dough is formed.
Knead the dough on a lightly floured surface for 10 minutes. Place the dough in a greased bowl, cover with a damp cloth and let it rise in a warm place for 1 hour.
Once the dough has doubled in size, punch it down and knead it again for 5 minutes. Divide the dough into two parts.
Shape each part into a round loaf and place them on a greased baking sheet. Cover them with a damp cloth and let them rise for 30 minutes.
Brush the loaves with melted butter and sprinkle with parmesan cheese. Bake in a preheated oven at 375 degrees F (190 degrees C) for 25 minutes.
Remove the loaves from the oven and cool on a wire rack. Enjoy!
